SUGAR-FREE APPLESAUCE

INGREDIENTS:

6 peeled, cored, & diced apples

¼ cup orange juice

1 tsp cinnamon

INSTRUCTIONS:

In 2½-qt saucepan, combine apples and juice [and cinnamon]. Cook mixture, stirring constantly, on medium-high heat, just until it comes to a boil. At once, turn heat to low and continue cooking mixture, stirring only occasionally, until apples are quite soft. Remove from heat.

With a wire whisk, whip the mixture until smooth or put it through your blender on high speed, about 30 seconds or until smooth. Refrigerate to use within 3 weeks. Makes about 3 cups.
