MACARONI & CHEESE, LIKE BEEFEATER

MACARONI & CHEESE, LIKE BEEFEATER

By Gloria Pitzer, as seen in… Eating Out at Home (National Home News, St. Clair, MI; September 1978, p. 22).

INGREDIENTS:

1½ cups macaroni, broken into ¼-inch pieces

½ tsp salt

4 cups boiling water

2 TB fat

2 TB flour

¼ tsp [additional] salt

1/8 tsp pepper

1 cup Pet Milk, diluted with 1 cup water

1 cup grated American cheese

1 TB horseradish

8 large, thin slices boiled ham

INSTRUCTIONS:

Add macaroni and ½ tsp salt to boiling water. Cook until tender then drain and rinse with cold water. Melt fat in saucepan. Blend in flour [additional] salt, and pepper. Stir in, slowly, diluted milk. Cook 15 minutes, stirring frequently. Add cheese and horseradish.

Cook slowly, until cheese has melted. Pour about 12 pieces of macaroni on each ham slice. Pour hot cheese sauce over macaroni then roll up and secure with string or toothpicks. Bake in hot oven (400°F) for 30 minutes or until ham has browned. Serves 8.
