HOPELESS SNOWBALLS

INGREDIENTS:

18-oz box fudge [or yellow] cake mix, prepared as instructed

3 egg whites

Dash salt

¼ tsp cream of tartar

7-oz jar marshmallow cream

Few drops of red food coloring to tint pink (optional)

½ tsp vanilla

8-oz package flaked coconut, scissor-snipped fine

2-3 cups powdered sugar

INSTRUCTIONS:

Spoon cake batter into 36 greased and floured [or paper-lined] cupcake tin wells – each one half full. Bake at 350°F for almost 20 minutes or until toothpick [inserted] in centers comes out clean. Freeze until firm. Slice rounded tops off, so cakes are completely flat, top & bottom. Remove papers and invert to frost.

Beat eggs, salt, and tartar until soft peaks form. Beat in marshmallow cream, red food coloring to tint pink (optional), and vanilla. Add coconut and powdered sugar, enough to give spreading consistency. Frost each cupcake in shape of half a ball. Chill until icing is set. Yellow batter cupcakes are frosted in white icing and chocolate batter in pink icing. Makes 3 dozen cakes. They freeze well.
