Hotel Astor Waffles

HOTEL ASTOR WAFFLES [Including homemade cake flour recipe*]

INGREDIENTS:

2 cups sifted cake flour*

2 tsp baking powder

½ tsp salt

3 eggs, separated

1 cup milk

4 TB melted butter

½ tsp vanilla

¼ tsp baking soda

½ tsp vinegar

[*NOTE: If you don’t have cake flour, use all-purpose flour, removing 2 TB of flour from the 2 cups and replacing it with only 1 TB cornstarch; sifting this 2 or 3 times, together, before using.]

INSTRUCTIONS:

Sift flour, baking powder, and salt together well. Beat egg yolks until lemon-colored and set aside. Beat egg whites until peaks hold when beaters are removed (not dry butt stiff). Combine milk, butter, vanilla, soda, and vinegar.

Combine the milk mixture with the yolks and beat in flour mixture. When smooth, fold in beaten egg whites. Let batter rest 10 minutes or until it bubbles on top. Then bake on hot, greased, waffle iron. Makes 4 big 8-inch waffles.

Batter doesn’t keep more than a few days, covered tightly and refrigerated. Don’t freeze this.

NOTE: TO USE FOR PANCAKES… thin batter with a little more milk, to pouring consistency for thin pancakes; or add a bit more flour for thicker pancakes. Serve with hot, maple syrup and butter.
