ELEVEN SECRET SPICES

INGREDIENTS:

    • 2 tablespoons paprika
    • 1 tablespoon onion salt
    • 1 teaspoon celery salt
    • 1 teaspoon rubbed sage
    • 1 teaspoon garlic powder
    • 1 teaspoon allspice powder
    • 1 teaspoon powdered oregano
    • 1 teaspoon chili powder
    • 1 teaspoon black pepper
    • 1 teaspoon sweet basil leaves
    • 1 teaspoon marjoram leaves, crushed fine

INSTRUCTIONS:

Combine all the ingredients as listed in a small jar with a tight-fitting lid, such as a baby food jar. Shake the mixture to combine it all and then store it out of direct sunlight, and away from heat or humidity. Lasts for months and months. Makes about 1/3 cup mixture.

TO USE THE SPICES:

Mix together – 4 teaspoons of the “11 Secret Spices” (above) with 1 cup flour, 2 tablespoons brown sugar, 1 teaspoon season salt. Repeat the mixture as necessary per amount of chicken you will be coating and place in a doubled, plastic food bag to use to coat chicken – as instructed in the “Oven-Fried Kentucky Chicken” recipe (see Index.) SPECIAL NOTE: When preparing “Big Bucket in the Sky!” (07-08-19), omit the 2 packages of Italian dressing mix and replace them with 3 tablespoons of the “11 Secret Spices” (above), plus 3 tablespoons cornstarch. Also omit the last 3 ingredients that you combine with the pancake mix and, instead, use [an additional] 2 teaspoons of the “11 Secret Spices” (above) with the pancake mix. Follow the [“Big Bucket…”] recipe as it otherwise directs.
