GLORIFIED HASH

By Gloria Pitzer, as seen in… The Better Cooker’s Cookbook (Happy Newspaper Features, Algonac, MI; 1973, p. 35)

INGREDIENTS:

1 large onion, chopped fine

4 TB fat or salad oil

4 cups raw potatoes, cubed

4 cups cooked beef, cubed

Salt & pepper [to taste]

½ tsp Worcestershire sauce

2 cups hot water

3 TB flour

¼ cup cold water

INSTRUCTIONS:

In a 10-inch skillet, cook onions in fat or oil until golden brown. Add potatoes, meat, seasonings, Worcestershire sauce, and hot water. Cover and cook until potatoes are tender.

Mix the flour and cold water to a smooth paste and use this mixture to thicken gravy in the skillet. Heat thoroughly. Makes 6 servings.
