GENE HACKMAN’S CHICKEN RECIPE
[With BBQ Variation]

INGREDIENTS:
2 small chicken fryers, [cut into] 9 pieces each
[Salt]
12-oz jar apricot preserves
8-oz bottle creamy French dressing
2 envelopes onion soup mix
INSTRUCTIONS:
Salt the chicken [to taste] and set aside. Mix other ingredients together in a small bowl. Arrange chicken pieces skin-side-up in a shallow baking pan. Brush, to coat well, with [some of the] preserves mixture. Bake at 350°F for an hour, without turning pieces, until skin is crispy. Baste generously with preserves [mixture] about every 10 minutes, while baking. Serves 6.
FOR BBQ CHICKEN:
Stir ½ cup Open Pit barbecue sauce [or Open Pitzer BBQ Sauce] into basting mixture. Any fruit preserve flavor may be used in place of apricots. Leftovers freeze well.
