MAURICE DRESSING – LIKE HUDSON’S*
*Another version by Gloria Pitzer, as seen in… Gloria Pitzer’s Cookbook – The Best of the Recipe Detective (Balboa Press; Jan. 2018, p. 30). [A revised reprint of Gloria Pitzer’s Better Cookery Cookbook (Secret RecipesTM, St. Clair, MI; May 1983, 3rd Edition).]
I know there are many people who claim to have the authentic recipe, right from the kitchens of the J. L. Hudson Company, where this secret formula had its beginnings; but their recipes did not produce the same dressing as served in the company’s dining rooms. This is what I devised.
Mix together: 2 cups mayonnaise, 2 teaspoons dry minced parsley, ½ cup minced dill pickles, 4 teaspoons Dijon mustard, 2 teaspoons onion powder, a 3.3-ounce jar (baby food) strained egg yolks, 1 teaspoon garlic salt, 1 teaspoon sugar, and a pinch of pepper.
Serve over torn greens, covered in matchstick-size pieces of ham, turkey and Swiss cheese – as it was once served in Detroit’s greatest store ever!
