Irish potato and cabbage classic sprinkled with bits of green onion.

INGREDIENTS:

4 cups shredded cabbage

½ tsp salt

1-lb smoked sausages

6 servings instant mashed potatoes, prepared according to package directions

1 cup sliced green onions

1 TB butter

¼ tsp pepper

INSTRUCTIONS:

[In an accommodating pot,] heat ½ inch of water to boiling. Add shredded cabbage and salt. Cover and cook for 8 minutes [then] drain. Meanwhile brown sausages. Prepare instant mashed potatoes according to package directions, adding sliced green onions to liquid. Fold [cooked] cabbage into potatoes with butter and pepper. Top with sausages. Serves 4.
