In honor of TODAY, being National Cupcake Day, here’s Mom’s copycat recipe for “Yellow Cupcakes” [Like Sanders’], with [Sanders’] Buttercream (Icing); as seen in her self-published cookbook… The Copycat Cookbook (Secret RecipesTM, St. Clair, MI; April 1988, p. 56). As always, I’m asking only for proper credit if you care to re-share it.

YELLOW CUPCAKES (Like Sanders)

INGREDIENTS:
3 cups cake flour
1¾-cup sugar
1 TB baking powder
1 tsp salt
½ cup vegetable shortening
2 eggs
1 cup milk
1 tsp vanilla
1 tsp lemon extract
1 recipe of [Sanders’] Buttercream (Icing)
INSTRUCTIONS:
Sift flour, sugar, baking powder, and salt into the large bowl of an electric [stand] mixer; add shortening, eggs, milk, vanilla, and lemon extract. Beat at medium speed for 4 minutes, scraping bowl often. Line 36 muffin tins [or “wells”] with paper liners. Fill two-thirds full with batter.
Bake in moderate oven (350°F) for 20 minutes, or until tops spring back when lightly pressed with fingertip. Remove from tins and cool completely on wire racks. Spread with [Sanders’] Buttercream (Icing)…
