CHICKEN CUTLET SANDWICH

INGREDIENTS:

6 boneless chicken breasts

Bowl of water

Bowl of flour

Bowl of [my Lone John Sliver Fish Batter]

INSTRUCTIONS:

To imitate the chicken patty that is now a big best-seller on most restaurants’ lunch menus – flatten chicken breasts with a meat hammer until very thin. Dip pieces in water and let excess drip off, then dust in plain flour and dip into a bowl of [my Lone John Sliver Fish Batter (pictured below)] recipe…

Brown in about 1 inch of hot oil, in a skillet. Transfer to cookie sheet and bake, uncovered, at 375°F for 15 to 20 minutes or until tender and nicely browned. Serve on split and toasted buns or onion rolls.
