In honor of May, being American Cheese Month, here’s two of Mom’s secret recipes in one, for…

CHEESE WISH (FROM BLENDER WHITE SAUCE)

INGREDIENTS:
[1 cup prepared “Blender White Sauce” (see below*)]
2 raw egg yolks
4 tablespoons vegetable oil
1 tablespoon glycerin (from drugstore)
3 tablespoons chicken bouillon powder
½ teaspoon turmeric
¼ pound melted American cheese
¼ pound melted cheddar cheese
INSTRUCTIONS:
It is also possible to imitate Cheese Wish Spread by preparing… my “Blender White Sauce” [see recipe below]. To 1 cup of it, while it is still warm in the top of a double boiler over simmering water, beat in egg yolks, stirring until incorporated and smooth.
Beat in oil and glycerin. Combine this mixture with bouillon powder, turmeric, and [both] cheeses – then just enough hot water to give it the consistency equal to the supermarket product.

*BLENDER WHITE SAUCE

INGREDIENTS:
1 ½ cups very hot milk
¼ cup butter or margarine
4 slices stale white bread, in small bits
2 tablespoons chicken bouillon powder
dash of pepper
INSTRUCTIONS:
As listed, place all ingredients in a blender. Cover and blend on high-speed with an on/off motion until smooth. (About 30 seconds should do it!) Keep the sauce hot in top of a double boiler over simmering water until time to serve – or put it in the microwave on lowest possible setting for a minute or so just before serving.
Spoon the sauce over steamed vegetables, or whatever pleases you. Makes about 3 cups of sauce. Refrigerate leftovers to rewarm in, either, top of double boiler or microwave, as suggested above.
