GRAHAM CRACKERS – Homemade
By Gloria Pitzer, as seen in… The Great Imitator’s Cookbook (Secret RecipesTM, Marysville, MI; October 1999, p. 20). As always, asking only for proper credit if you care to re-share this recipe.
INGREDIENTS:
2/3 cup packed brown sugar
½ cup real butter
¼ cup light corn syrup
¼ cup dark molasses
2 tsp vanilla
½ cup milk
1 TB oil
2 cups whole wheat flour
1 cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
INSTRUCTIONS:
In large mixing bowl, beat first 7 [ingredients (all wet stuff), as listed,] until beautifully combined. In a second bowl, mix remaining dry [ingredients] together and add to first mixture a little at a time, using a big electric mixer to do this job!
When it’s finally quite smooth, oil your hands and pat-out the dough, a [quarter] at a time on waxed paper… to a [9”x12”] rectangle. Score into [3-inch] squares. Lift carefully, [using] pancake turner, to a lightly greased baking sheet. Pierce each square 5 or 6 times, with the tines of a fork.
Bake at 350°F for 12-14 minutes or until golden and just beginning to [get] brown around the edges. Do not over-bake these. Remove to paper towels, at once, to cool. Store at room temperature. Makes about [4] dozen 3” squares.
