PEAS AND PEANUTS SALAD

Like that served on The Voyageur restaurant’s salad bar – in St. Clair, MI – I found this very good and a refreshingly different change from the green salad.
INGREDIENTS:
10-oz package of frozen peas
2 cups dry, roasted peanuts
1 ½ cups mayonnaise
2/3 cup sour cream
3 green onions, finely scissor-snipped
INSTRUCTIONS:
Open peas and let them thaw in a nice glass salad bowl. You don’t cook these peas; but don’t worry – once they marinate with the [mayo-sour cream] dressing, they’ll be fine. Combine the peas with the peanuts, mayonnaise, sour cream and onions. Cover tightly and refrigerate several hours before serving. Makes 6 to 8 servings. Left-overs keep refrigerated for 3 to 4 days. Do not freeze this.
