FRUIT COCKTAIL CAKE

INGREDIENTS:
1 cup flour
1 cup sugar
1 tsp baking soda
Pinch of salt
2 cups canned fruit cocktail, undrained
1 slightly beaten egg
1 recipe “Topping”* [included below]
1 recipe “Icing”* [included below]
INSTRUCTIONS:
As listed, combine the above ingredients except topping and icing. Beat ingredients for 3 minutes with electric mixer on medium speed and pour into greased and floured 9-inch-square pan.
*Prepare “Topping”, by combining ½ cup each: light brown sugar (packed), walnuts (chopped), and coconut (diced fine). Sprinkle over batter and bake at 350°F for 45 minutes or until “tester” inserted in center comes out clean.
*Prepare “Icing”, by cooking over medium heat: 1 cup sugar, 1 cup Pet Milk, ½ cup butter, and ½ tsp vanilla – stirring until thickened. Spoon on warm cake. Serve warm or cold. For 6 to 8.
