In honor of TODAY, being National Marzipan Day, here’s Mom’s secret recipe for Marzipan Candy; as seen in her self-published newsletter, Gloria Pitzer’s Secret Recipes Newsletter (Secret RecipesTM, St. Clair, MI; Nov.-Dec. 1997, p. 10). As always, I’m asking only for proper credit if you care to re-share it.

MARZIPAN CANDY

INGREDIENTS:
2 2/3 cups (12-oz) blanched almonds
2 slightly beaten egg whites
2 tsp almond extract
4½ cups (1-lb) sifted powdered sugar
2 to 4 TB orange juice
INSTRUCTIONS:
In food grinder, using finest blade, grind almonds four times. Combine ground almonds, egg whites, extract, and powdered sugar. Add juice one tablespoon at a time, until mixture becomes easy to handle. Knead with hands until smooth.
Form into desired shapes – fruits, vegetables, flowers – using hands or small molds. Let stand on wax paper to dry. [NOTE: the bigger the pieces, the longer they’ll take to dry.]
Color with food coloring that has been diluted with a little water. Use cocoa powder, dry and diluted, for brown tones (on potatoes or mushrooms). Allow to dry [again]. Keep refrigerated. Makes about 2 pounds.
