
PUMPKIN MUFFINS (Like Hudson’s)

INGREDIENTS:
18-oz box Betty Crocker’s Butter Pecan cake mix or yellow cake mix

1-lb can pumpkin
3 eggs
1/3 cup milk
1/3 cup oil
1 TB pumpkin pie spice
_________
1 cup raisins
1 cup chopped pecans
INSTRUCTIONS:
Put cake mix in a medium mixing bowl. Put next 5 ingredients [listed] into a blender, blending on high speed until smooth. Pour blender mixture into dry cake mix and beat with an electric mixer, on high speed, to thoroughly combine. Do not overbeat.
Line 18 muffin wells with cupcake paper liners. Place 2 TB batter in each. Bury 6 to 8 raisins in batter and sprinkle with 1 teaspoon chopped pecans. Fill each to the top of the paper liner with [more] batter and bury a few more raisins in each then press an additional teaspoonful of chopped pecans on each.
Bake at 400°F for 30 minutes or until muffins are richly golden brown and slightly cracked on top. Cool in pans on racks 15 minutes before serving. Makes 18 large muffins.
