PEANUT BUTTER FUDGE (from Seize Chocolate Fudge)

INGREDIENTS:
¼-lb butter or margarine
12-oz pkg peanut butter [chips or] morsels
2 eggs, well beaten
1-lb powdered sugar
4 TB peanut butter
1 tsp vanilla
INSTRUCTIONS:
In top of double boiler, over hot water, melt butter and morsels, stirring until smooth. Use an electric [hand] mixer, on medium speed, to beat in eggs until completely combined. Remove from heat. Beat in powdered sugar, peanut butter, and vanilla.
Spread evenly into buttered, 9-inch, square pan. Cover in plastic wrap and chill several hours or until firm enough to cut into neat squares. Makes 16 [large] pieces.
