LOLLIPOPS

[Or Candy Ornaments]

INGREDIENTS:

2 cups sugar

1 cup light corn syrup

½ cup water

½ tsp red or green food coloring

1½-tsp essence of peppermint or oil of wintergreen or spearmint

INSTRUCTIONS:

Grease small gelatin molds and place [with] lollipop skewers 4 inches apart, on oiled baking sheets. Combine sugar, corn syrup, and water in saucepan. Cook over medium heat, without stirring, to 300°F or until a small amount of mixture separates into threads, which are hard and brittle when tested [for hardball stage] in very cold water.

Cool slightly. Add coloring and flavoring [then] blend. Drop candy mixture from tip of teaspoon over [one end of] skewers to form 2-inch discs. [For ornaments,] pour enough candy mixture into greased molds to cover bottoms. Make holes with a toothpick before mixture is set.

If [mixture] hardens before all of the lollipops or ornaments are made, return pan to low heat only long enough for the [mixture] to melt. When candies are cool and hard, decorate, if desired, with confectioners’ sugar [or] frosting pressed through a decorating [tip]. Makes 3½ dozen lollipops or ornaments.
