
MUFFINS LIKE TIM HORTON’S
(DONUTS WITHOUT FRYING – Muffin Style)

INGREDIENTS:
3 TB butter
4 TB sugar
¼ cup liquid non-dairy creamer
1 cup self-rising flour

INSTRUCTIONS:
As listed, beat well together until smooth like a cake batter. Divide equally between 6 paper lined muffin or cupcake wells and bake [at] 350°F [for] 25 minutes or until tester, inserted into centers, comes out clean of any wet batter. Right out of oven, spread each with a dab of canned, ready-to-use frosting (any flavor). Makes 6.
*OPTIONS – Add a dash of nutmeg to the batter or a teaspoon of vanilla or other extract of your choice. Add 1 cup chopped walnuts or pecans or “plumped” raisins (raisins that you micro warm briefly). But with the raisins – run them under water, in a strainer, and dust lightly in plain flour so they won’t sink to the bottom of the muffins, during baking.
