PEANUT BRITTLE

In honor of TODAY, being National Peanut Brittle Day, here’s Mom’s secret recipe for a 5-ingredient “Peanut Brittle”; as seen in… Gloria Pitzer’s Secret Recipes Newsletter (Secret RecipesTM, St. Clair, MI; Nov.-Dec. 1992, p. 9). As always, I’m asking only for proper credit if you care to re-share it.

PEANUT BRITTLE

By Gloria Pitzer, as seen in… Gloria Pitzer’s Secret Recipes Newsletter (Secret RecipesTM, St. Clair, MI; Nov.-Dec. 1992, p. 9).

INGREDIENTS:

½ cup dark corn syrup

¼ cup molasses

¼ cup sugar

2 TB butter

1 cup salted peanuts

1/8 tsp baking soda

INSTRUCTIONS:

[In a 2-qt saucepan,] cook corn syrup, molasses, sugar, and butter until blended, [using] medium heat. Stir in peanuts and boil until small amount separates into hard threads when dropped into cold water. [Then] stir in baking soda and quickly, as it foams, pour into a buttered shallow pan. When firm, break it up. Makes about ½-lb.
