SHRIMP SCAMPI, LIKE OLIVE GARDEN’S
By Gloria Pitzer, as seen in her self-published cookbook, The Great Imitator’s Cookbook (Secret RecipesTM, Marysville, MI; October 1999, p. 46). As always… asking only for proper credit if you care to share it.
DRESSING MIXTURE:
Combine: ½ cup creamy garlic dressing & 1 TB lemon juice…
OR…
½ cup bottled Wishbone Italian Dressing, ¼ tsp dry mustard, a few drops of tobacco, and 1/3 cup ketchup.
INSTRUCTIONS:
[Boil 1-lb spaghetti, linguini, or fettuccine pasta.] Preheat broiler. Arrange 1-lb large shrimp (uncooked, shelled, and cleaned) on a broiler pan without the rack, spooning the dressing mixture over them (or dip shrimp into dressing, one at a time).
Broil 3-4 inches from heat for about 5 minutes, turning once [halfway through] and basting with more dressing mixture. Sprinkle with parsley and serve promptly [on bed of pasta. Makes 4 servings.]
