By Gloria Pitzer, as seen in… Gloria Pitzer’s Cookbook – Best Of The Recipe Detective (Balboa Press; Jan. 2018, P. 231). [A revised reprint of Gloria Pitzer’s Better Cookery Cookbook (Secret RecipesTM, St. Clair, MI; May 1983, 3rd Edition).]

The Candy WITHOUT the holes!

INGREDIENTS:

3¾ cups sugar

½ cup light corn syrup

1 cup water

1 teaspoon flavoring oil of your choice ( NOTE: this is not extract but an oil from the pharmacy)

6 to 8 drops assorted food coloring of your choice

INSTRUCTIONS:

Mix together sugar, corn syrup and water in A heavy 2 ½-quart sauce pan. Cook on medium heat, stirring constantly. Bring to a boil. Boil, without stirring, until it reaches 310°F – a bit more than “hard crack” stage (when a few drops of the hot candy, put in cold water, causes the candy to make a “cracking” sound. At that point, remove from heat.

Add flavoring oil and food coloring. Pour into foil-lined pan so that it is about 1/8-inch thick. When candy hardens at room temperature, within an hour, you can break it into slivers and dust in powdered sugar. Store at room temperature in a covered container. Makes 2 pounds.
