OATMEAL CRANBERRY MUFFINS (Like Old Country Buffet)
[Plus, a raisin variation.]

INGREDIENTS:
1 cup fresh cranberries*
1 cup milk
2 TB sugar
1/3 cup real mayonnaise
2 cups whole wheat flour
½ tsp salt
1½ tsp baking powder
1 cup dry rolled oats
INSTRUCTIONS:
Cook [cranberries] only until tender, in just enough water to cover [them]. Drain and cool. Set aside, while you mix together milk, sugar, mayonnaise, flour, salt, and baking powder. When completely mixed, fold in cranberries and divide between 10 paper-lined, cupcake wells. Sprinkle a little dry rolled oats over the tops and bake at 350°F about 25-30 minutes or until [toothpick] tester comes out clean. Makes 10 muffins
*NOTE: Instead of cranberries, you can substitute 1 cup raisins that you’ve plumped 10 minutes in boiling water and drained well and floured very lightly, before folding into batter. Then continue as recipe directs.
