GREENFIELD VILLAGE COOKIES

INGREDIENTS:
2 cups flour
1 tsp each: ground ginger, ground cloves, cinnamon
½ tsp soda
½ tsp salt
¾ cup granulated sugar
¾ cup butter
1 egg, plus yolk of another egg (save the white for later)
¼ cup light molasses
1 tsp lemon extract
INSTRUCTIONS:
Preheat oven to 375°F. Combine all ingredients, as given, mixing until smooth. Shape by level measuring tablespoonful into balls, placing 2 inches apart on lightly greased baking sheets. Press bottom of a half/cup measuring cup against the dough to grease it. Dip it then into a dish containing some sugar.
Dip each ball, briefly, into slightly beaten, leftover egg white. Then press [down with sugared bottom of half/cup measuring cup] to smooth round, dipping the half/cup [measuring cup] into sugar with each cookie flattened. Sprinkle cookies in colored sugar or candy bits, just as they did at the Henry Ford Museum in the Greenfield Village in 1976.
Bake cookies at 375°F about 12-15 minutes, until delicately golden. Serve with hot cider. Makes 60 cookies [5 dozen].
