CREAM FILLING For Donuts & Eclairs

INGREDIENTS:
4 TB flour
¾ cup sugar
½ cup cold milk
1 cup scalded milk
2 eggs or 4 yolks, beaten
1 TB butter
¼ tsp salt
1 tsp vanilla
INSTRUCTIONS:
Mix flour and sugar, add cold milk and blend thoroughly, stirring constantly. Pour mixture into scalded milk, set in double boiler – over LOW heat. Cook until well thickened, stirring constantly. Cover and cook 15 minutes longer. Stir 2 or 3 times.

Blend the hot mixture into the beaten eggs. Return to low heat and cook, stirring constantly, 2 or 3 minutes to cook the egg. Remove from heat, add butter, salt and vanilla; and stir, until blended. Cool. Use as filling for cream puffs, donuts and eclairs.
