WHOOPIE PIES OR DEVIL DOGS (& FILLING)

This is a favorite Amish recipe from our recent travels through Indiana. [See also: “Whoopie Pie Filling”]
INGREDIENTS:
6 TB butter
1 cup sugar
1 egg
2 cups flour
½ cup unsweetened dry cocoa
Dash of salt
½ cup real buttermilk
1 tsp vanilla
1 tsp baking soda
½ cup hot tap water
[1 recipe “Whoopie Pie Filling”]
INSTRUCTIONS:
Cream Crisco until light, adding sugar and creaming briefly [again]. Then beat in egg. Set aside. Mix flour, cocoa, and salt together. Mix buttermilk and vanilla together. Soften baking soda in hot water and set aside. Alternately, beat in cocoa mixture with buttermilk mixture [to Crisco mixture] and beat for 2 minutes.
[Then] beat in baking soda/water. Mixture will be more like very thick cake batter than like a cookie dough. Drop by rounded teaspoonful onto well-greased baking sheets, 2 inches apart. Try to keep cookies uniform in size. Bake at 400°F for 8 to 10 minutes or until set. Cool and put together, sandwich style, with “Whoopie Pie Filling”.
