CARNIVAL COTTON CANDY
By Gloria Pitzer, as seen in… The Second Helping Of Secret Recipes (National Homemakers Newsletter, Pearl Beach, MI; July 1977, p. 74).
INGREDIENTS:
1/3 cup water
¼ cup light Karo [syrup]
1 cup sugar
INSTRUCTIONS:
Grease handles of two wooden spoons. Tape to a tabletop so that two-thirds of the handles extend over the edge. Place [news] papers on floor to protect area beneath. Bring [all] three ingredients to a boil, stirring constantly to the hard crack stage (310°F). Remove from heat.
Use fork to dip into sugar mixture and string sugar quickly across handles, back and forth until all of the sugar mixture has been used. Very thin threads will result if you work quickly.
Shape cones from white paper using Scotch tape to secure the seams and hold the shape. Gently shape the sugar threads around the paper cones to resemble Carnival Cotton Candy. Or simply divide sugar threads between small, clear plastic sandwich bags. Depending upon the consistency of the sugar threads, you should average about six cones or small bags full. Will not keep. Use within 8 hours of having prepared this.
WORDS OF WARNING: Cooking time is crucial to the success of this recipe and so is how quickly you can drape the sugar threads across the spoon handles…
