STUFFED FLOUNDER, LIKE RED LOBSTER’S

Two restaurants do this classic dish justice – one is Joe Muer’s in downtown Detroit and the other is Red Lobster Restaurants, a good national “chain”.
INGREDIENTS:
1 egg
6-oz frozen crab meat (cooked and flaked)
1 cup finely crushed Ritz crackers
Grated rind of half a lemon (or 1 tsp bottled rind)
¼ cup finely minced celery
¼ cup mayonnaise
2 TB grated parmesan
¼ tsp garlic salt
Black pepper, to taste
2 flounders (each split lengthwise, boned and cleaned, heads and tails removed)
INSTRUCTIONS:
Beat the egg, briskly, and add to the cooked, flaked crab, along with each remaining ingredient (except the fish). When stuffing mixture is thoroughly mixed, divide in half and fill each fish, securing with toothpicks, in 4 or 5 places to seal [it].
Brush, generously, with melted butter. Dust in paprika. Broil 3 inches from broiler heat for 6 to 7 minutes – or until golden brown, each side, turning fish once. Cover fish, loosely, in foil. Bake for 10 minutes, at 375°F – and serve at once. Serves 2 to 4.
