HANCOCK INN CHEESECAKE*
[*Garnished With Strawberries, Blueberries, or Other Fruit Topping]

[This recipe is in three parts – crust, filling, and topping.]
GRAHAM CRACKER CRUST INGREDIENTS:
2 cups graham cracker crumbs
½ cup melted butter
1/3 cup sugar
CRUST INSTRUCTIONS:
In 9-inch springform pan moisten crumbs with melted butter and mix with sugar. [Press to fill in bottom of pan evenly.]
FILLING INGREDIENTS:
3 pkgs (8-oz each) cream cheese
4 eggs
1 cup sugar
1 tsp vanilla
FILLING INSTRUCTIONS:
Beat cream cheese with eggs, sugar, and vanilla on medium speed for 5 minutes or until very smooth. Pour into crust. Bake at 350°F for 30 minutes. Cool for 15 minutes. Meanwhile…
TOPPING INGREDIENTS:
16-oz tub sour cream
2TB sugar
1 tsp vanilla
*Strawberries [ or blueberries] or other sweetened fruit – for garnishment
TOPPING INSTRUCTIONS:
…Mix together sour cream, sugar, and vanilla [then] spread over slightly cooled cheesecake. Return to oven for about 10 minutes to set the topping. Refrigerate several hours or overnight, before cutting to serve 10-12, topping each piece in strawberries [ or blueberries] or other sweetened fruit.
Refrigerate leftovers up to a week or freeze to use within a few months.
