SHORTBREAD, like Lorna Doone

INGREDIENTS:

1 cup butter

½ cup powdered sugar

2 cups flour

¼ tsp baking powder

INSTRUCTIONS:

Cream butter and powdered sugar until light and fluffy. Gradually blend in half the flour, the baking powder, and then the rest of the flour. Gather [dough] in a ball and wrap in plastic food bag. Refrigerate the dough one hour or until you can handle it enough to pat it out evenly, over the bottom of a pam-sprayed jellyroll pan, as evenly in thickness as possible.

Bake at 300°F about 20 minutes or until set but not brown. Cut while warm, with a pizza wheel, into 2×2-inch squares. Remove when cool, using a spatula to transfer cookies to waxed paper. Store in a covered container at room temperature to use in a few weeks. Makes 2½ dozen cookies.
