HUSH PUPPIES, SOUTHERN STYLE

INGREDIENTS:
12-ounce can whole kernel corn, drained
1 ½ cups biscuit mix
1/3 cup self-rising flour
2 green onions, stems only, scissor-snipped
1 teaspoon each: season salt and onion salt
½ cup club soda
INSTRUCTIONS:
In a small, deep, but narrow mixing bowl – combine the corn, biscuit mix, self-rising flour, onions and salts. Mix well with a fork until thoroughly combined. Pour in soda and mix with a spoon until you have a moist, thick, biscuit-like dough. Drop dough by rounded-teaspoonfuls into 425°F oil, deep-frying until golden brown and crispy. Remove from hot oil with a slotted spoon and let drain on paper towels. Serve piping hot with my Shrimp Cocktail Sauce (below.) Serves 4 to 6 subtly, but surely!
