NEAT MAN MARKET’S OPEN-FACE APPLE PIE

INGREDIENTS:
10-inch, partially baked, “Butter Crust” (see Index)
4 to 5 large apples (peeled, cored and thick-sliced) to fill a 10-inch pie plate to the rim
2 cups sugar
1/3 cup flour
1 teaspoon salt
1/3 cup Half-and-Half or light cream
¼ cup milk
½ teaspoon cinnamon
INSTRUCTIONS:
While the “Butter Crust” bakes for 12 minutes at 375°F, place apples in a large bowl. Put everything else through blender, on high-speed, until smooth (about 1 minute.) Pour over apples, coating them well, and then slide rack of oven out just far enough that you can empty the apples and sauce mixture into the hot crust.
Return it [to oven] to bake for 90 minutes or until apples are soft. Cover pie loosely with foil for 1st hour of baking! Remove foil for last 30 minutes or so. Serve it warm – a la mode – with vanilla ice cream and caramel sauce, or with shredded cheddar cheese. Serves 6 to 8.
