CHEESE WISH

Part of the fun of writing my recipes is coming up with the names for the imitations that will (1) avoid trespassing on the copyrighted or patented trade names of the products I attempt to emulate and (2) waiting for the amused reaction of my readers.

This is one of those product emulations that tickles me, because it was our youngest daughter, Cheryl, who came up with the name. In my adventures with Common Sense Cooking, I have discovered several recipes that give both flavor and personality to otherwise plain dishes.

I have so many American readers overseas who cannot find brand-named products, that recipes like this one, turn their culinary creations into reminiscent reflections of home.

INGREDIENTS:

½ pound each: American cheese slices, cut into bits, and sharp cheddar, grated

¼ cup vegetable oil

2 tablespoons vodka

½ cup dry milk powder

½ cup chicken broth (canned or homemade)

INSTRUCTIONS:

Place everything in top of double boiler over simmering water. Using a portable electric mixer on low, beat it as it melts until completely smooth. Then, put it through your blender on medium speed, using an on/off agitation, for about 20 seconds.

Transfer to a container with a tight-fitting lid and refrigerate to use within 6 weeks. Freezes well up to a year. Makes about 4 cups.
