BISCUITS LIKE CRACKER BARREL’S

BISCUITS LIKE CRACKER BARREL’S

By Gloria Pitzer, as seen in… Secret Make Alike Recipes  – Revised (Secret RecipesTM, Marysville, MI; May 1997, p. 10).

INGREDIENTS:

2 cups flour

1 TB baking powder

1 TB sugar

½ tsp salt

1/3 cup Crisco (not margarine, please)

1/8 tsp baking soda

¾ cup buttermilk

INSTRUCTIONS:

Mix flour, baking powder, sugar, salt, and Crisco, until crumbly. Make a “well” in the center and add baking soda, dissolved first in buttermilk. Pour into well. Mix thoroughly and then knead in bowl until smooth and elastic, dipping hand into just enough more flour that dough doesn’t stick to [your] hand.

Pat [dough] out to 1-inch thick and cut into 3-inch rounds (using a juice concentrate can as the cutter) [or something of equivalent size]. Bake on greased baking pan, [at] 450°F [for] 15 to 18 minutes or until golden and doubled [in size]. Makes 8 to 10 biscuits.
