COOKIE SHEET PREPARATION

Whenever you see (*) by ‘prepared cookie sheet’, in one of my cookie recipes, I want you to prepare the cookie sheet in this manner…
INSTRUCTIONS:
Spray cookie sheet with Pam, evenly. Place in a 350°F oven for 4 or 5 minutes or until the Pam turns brown. Use a paper towel to wipe off browned Pam [spray] so that you leave a light but even film on the cookie sheet.
While the sheet is still warm, apply cookie dough to it, as directed in individual recipes. DO NOT repeat the greasing method between batches of cookies. There will be ample shortening in the cookie dough to keep the baking sheet sufficiently greased for at least 6 or 8 batches…
